Raw Milk Kefir Recipe
Ingredients:

4 cups of raw milk (fresh from Twisted Ash Farm, of course!)

2 tablespoons of kefir grains (available online or from a local supplier)

Prepare Your Tools:

Clean glass jar (quart size or larger)

Wooden or plastic spoon (avoid metal to preserve the grains)

A clean cloth or paper towel and rubber band (to cover the jar)

Add Raw Milk to the Jar: Pour the raw milk into your clean glass jar, leaving some space at the top (about 1-2 inches).

Add the Kefir Grains: Gently add 2 tablespoons of kefir grains into the jar with the milk. You don’t need to stir it yet.

Cover the Jar: Cover the jar with a clean cloth or paper towel and secure it with a rubber band. This allows the milk to breathe while fermenting and prevents dust or debris from getting in.

Let It Ferment: Leave the jar at room temperature (around 68-72°F) for 24-48 hours. The fermentation time depends on how thick and tangy you like your kefir. After 24 hours, check the consistency and taste. If it’s too mild, let it ferment longer.

Strain the Kefir: Once it’s ready, strain out the kefir grains using a fine mesh strainer. The grains can be used again for the next batch, so store them in a clean jar with a little milk until you’re ready to make more.

Enjoy Your Kefir: You can drink the kefir as is, or add it to smoothies, granola, or even use it as a base for salad dressings.
